The way to really experience Dave's genius is to order the BBQ Feast (for 2 or 4)which is St. Louis-style Ribs, Texas Beef Brisket, Country Roasted Chicken, corn bread muffins, coleslaw, campfire beans, and lodge fries — all served in a trash can lid. Her grandfather, Edgar "Papa" Schmidt ran the legendary Kreuz Market from the time he purchased it from the Kreuz family in 1948.She and her husband, Jeff are fulfilling one of their wildest dreams.Kismet and Jack Daniels brought them Pitmaster Tim McLaughlin, who trained in the original Kreuz Market in Lockhart. Lockkhart Smokehouse is the only place in the DFW area where you can get Kreuz Market Sausage. And just like the original, the meat is served on butcher paper, without sauce and without forks. The meat doesn't need sauce and your fork is at the end of your arm. The brisket, sausage, ribs and other meats are smoked over Texas post oak. Updated versions of classic southern sides and some Schmidt family favorites round out the menu. Of course, what is Texas barbeque without cold beer? Lockhart Smokehouse has the great ones ice cold and ready for your drinking pleasure.

Shoulders smoked over hickory for nine hours , chopped, and served without a drop of sauce. The only seasoning used is a small amount of salt. The sauce here is Western North Carolina style(vinegar & ketchup). When you order; make sure you ask for "The Brown"(also known as bark). While you are here; you have to try Red Slaw (This tangy variation replaces the usual mayonnaise-based slaw dressing with a ketchup,and vinegar-based dressing)

Al Killian who is originally from Texas, has been cooking ribs and brisket in the same wood-fired smoker for 15 years at his Baker's Ribs in Eden Prairie. All sides and sauce are made from scratch at Baker's which is actually part of a chain based in Dallas. Nine of the ten stores are in Texas.The brisket is very good & the ribs are outstanding.All of Killian's meats are served un-sauced, but bottles of warm sauce are on every table. There are no deep fryers, so fries and rings are not sides.
