Gayot has the ultimate description:(I cant say any more than this) Wanda Walker's cochon de lait po' boy has earned a name for itself during its annual appearances at a vending booth at the New Orleans Jazz & Heritage Festival. For the uninitiated, that is a slow cooked, tender pulled pork sandwich loaded with coleslaw. Walker smokes pork shoulders with hickory, pulls them and then piles the glistening meat onto loaves of New Orleans French bread with shredded cabbage and a sauce made of Creole mustard, mayonnaise and horseradish. Other good bets include ribs, chicken, sausage and brisket. Go early; the place opens at 10:30 (when it's open) and closes when it sells out, an event that could occur at any time.

Wanda Walker is almost a saint for her signature dish Cochon de Lait po-boy (roast suckling pig).You might have encountered it at the New Orleans Jazz Festival.
